The aroma coming from the kitchen while this is cooking is heavenly. We chose to oven roast the recipe and it turned out amazing - perfectly juicy and moist. The rosemary and thyme herb mix is divine. When roasted, it forms an aromatic crust around the outer edge of the roast. Serve with a side of potatoes and carrots for a fabulous dinner. Note: We found there were not enough drippings to make gravy from scratch with the roasting method.

Cooking a beef roast is a pretty forgiving process. You can slap just about any beef roast in the oven at just about any temperature, and sooner or later it will reach the right stage of doneness. That being said, a convection oven can usually make your roasts better and do it in less time. Most ovens have elements at the top and bottom, which heat the air and transfer that heat into the foods you're cooking.
Potatoes, baked alongside the beef roast, make a perfectly easy accompaniment. The meat, hot or cold, tastes the most tender when sliced very thin; an electric knife does a good job. Rinse beef and pat dry.
